A simple summer dessert, made with fresh peaches, cinnamon and a sugary cobbler crust. Serve with scoops of vanilla ice cream.
Serves 4-6: Prep & Cook time 1 hour
Ingredients
8 Fresh ripe peaches, cut into 8 pieces
1 tsp Vanilla Extract
1/2 tsp Ground Cinnamon
2 tbsp Soft Light Brown Sugar
Vanilla Ice Cream to serve
For the Cobbler
80g butter, chilled & cubed
200g Self Raising Four
100g Golden Caster Sugar
150ml Whole milk
1 tbsp Demerera Sugar
Method
1/ Heat the oven to 190C/fan 170C/gas 5. Put the peaches in a shallow baking dish, sprinkle over the vanilla, cinnamon, sugar and 2 tbsp of water. Toss then put in the oven while you make the cobbler.
2/ Whizz the butter, flour, caster sugar and a pinch of salt in a food processor until resembling fine breadcrumbs. Mix in the milk to make very soft, spoonable dough.
3/ Take the baking dish out of the oven and spoon blobs of dough over the peaches, sprinkle with demerara sugar and bake for 40-45 minutes or until the peach mixture is bubbling and the cobbler is golden and cooked through. Serve hot in bowls with ice cream or custard.
Thank you for another brilliant recipe, which is fast becoming a go-to pud in our house. Having made it with nectarines and apricots before, last night I did it with 🍒 for a truly spectacular dish.
My only change is to reduce baking time by baking individual ramekins in an air fryer (160 oC): 5 min to soften the fruit and 15-20 min to bake the dish. But then, I scale down to just 2 slightly greedy portions...
