Brussels Sprouts with Ginger & Orange



Serves 10: Total time 30 mins

Ingredients

Brussels Sprouts, trimmed & halved

2tbsp grated Ginger

2 Oranges, zested & juiced

100g Butter

2tbsp Soy Sauce


Method

1/ Bring a large pan of water to a simmer and add a big pinch of salt. Add the sprouts and blanch for 3-4 minutes until they’re bright green and tender, but still have bite. Drain well. Mash the ginger, orange zest, and butter with plenty of seasoning. Tip into a frying pan and let it melt for a minute.

2/ Add the sprouts and toss to coat in the butter. Fry for 5-10 minutes until the edges are starting to turn golden brown. Add the orange juice and soy and simmer until the sauce coats the sprouts.
